Chef Spencer Lee has a passion for creative, thoughtful food.

Spencer has worked in the food industry for over 15 years. He got his start at Classic Cookout in Freeport (burgers and dogs on the flattop) and quickly learned how to make the best onion rings around. Since then he has worked in numerous kitchens in Vermont, Seattle, and has spent the last 6 years as the primary chef of Hug’s Italian Cuisine right here in Carrabassett Valley. Spencer has also done many guest appearance chef dinners and lunches for Maine Huts and Trails. He has a passion for local, fresh ingredients and appreciates the fact that the best tasting food is created with care and time. He especially enjoys cooking for friends at home and exploring cuisines from around the world.

At home in the outdoors, Spencer is a passionate mountain biker and downhill skier. He is the owner of Freeman Ridge Bike Park in Kingfield and is a professional mountain bike trail builder when he is not working in the kitchen. He resides in Carrabassett Valley with his chief food critic and wife, Kayla.
